So, Molly is currently…
....eating scrambles. Aside from all my relaxing canned options that I’ve been testing for Dry January, I’ve been doing a lot of scrambling - the new year has been busy so far! I haven’t had any good recipe inspiration in 2025 as of yet, but I am eating a LOT of these Archer Beef Sticks on my way out the door to play practice, carpool and swim team. I grab these in bulk at Costco every time I go so that we always have them in the pantry for school lunches and hanger emergencies. Harkening back to a more bountiful time, we did make an EPIC amount of delicious food for our New Year’s Eve celebration, which you can see an overview of here.
...making giant salads. One, because I get psyched about all the ingredients and have not learned the art of proportion with each, so when I combine everything, I have to use our largest bowl, but two - it works out well for my busy eating schedule. It’s so easy to just scoop out a hefty portion of salad into a bowl and top it with whatever grain (usually quinoa) and meat (usually ground beef) leftovers we have in the fridge. Top with a little cheese, salsa and/or guacamole … and voila! The perfect lunch that took three minutes to assemble. You can view the size of my latest creation in my TikTok post about it.
...listening to comfort choices. When the narrow category of Christmas music goes away after a full month of confinement, I sometimes deal with a bit of choice paralysis. For these occasions, I have spent a LOT of time curating my “liked songs” selection on Spotify - there are over 1,000 songs on there, ranging from Waylon Jennings to The Beatles to Kurt Vile. When I can’t make a decision, I put that puppy on shuffle and let ‘er rip. I’m most drawn to the old school/comfort choice options right now - Dolly Parton, Chris Stapleton and Rolling Stones.
...reading a lot. My goal is to read 100 books in 2025. That’s a lot, as I’m already realizing. I’m working on my fourth book now (and tracking my progress in GoodReads, should you ever want to check in on me). I just finished Hello Stranger by Katherine Center and while I enjoyed it, I have a lot of questions about face blindness and whether or not the author slipped up a few times in the central premise of the plot. Now, I am working toward my OTHER reading goal, which is to consume all of Kristin Hannah’s work. I’m currently at the beginning of Home Front, and I’m not far enough in to really comment on it yet (other than I don’t think I’m going to like the husband, which is not unusual for a Kristin Hannah book).
...watching Lioness on Paramount+: This is a Taylor Sheridan show, but it’s NOTHING like Yellowstone (other than the fact that James Jordan is in it, but he seems to be in every TS show). Zoe Saldana is a CIA agent who heads up a special division called “lioness” - she plants women undercover after putting them through the most unusual and rigorous training. I’m watching Season 2 at the moment, but it isn’t nearly as good as Season 1 (as with most things), so I would absolutely start from the beginning.
And Land Man on Paramount+: Yes. Another Taylor Sheridan pick (what can I say, I love his work!). This one combines TS with another entertainment love of my life, Billy Bob Thorton. He’s a quirky, funny, tough, coarse land man in Texas, fighting against the drug cartels to ensure his boss (Jon Hamm!) gets his oil-fueled payday. Also please enjoy Ali Larter as his wife - her character is a grown up version of who she played in Varsity Blues, so that certainly adds to the entertainment.
...loving my brand new sweatpants from Athleta. I got these as a replacement for a Christmas present that didn’t work out, and when I tell you I watched the tracking info like a hawk and then put them on the SECOND they arrived … and have worn them about 1M times since. I bought them two sizes too large so they would be extra comfy - these are not carpool sweatpants or “I can dress them up with a nice looking coat” sweatpants. These are PURE comfort and I am obsessed with wearing them to cozy up on the couch with my book in the evening or wearing them all day long with a nicer looking shirt for Zoom calls if I don’t have to leave the house. I got the heather gray color, but am highly considering 3-4 other colors the NEXT time they go on sale.
...looking forward to warmer weather! Just kidding, but not really. I moved to North Carolina to get AWAY from winter and we only get about one or two months of it, but I always long for warmer days and real Vitamin D-inducing sunshine. Also, we have some home repairs on the horizon that will hopefully come to fruition soon - holes in my kitchen ceiling that have been there for years, our screened in porch roof that was totaled because of a tree falling on our house during Hurricane Helene and all new siding for our home exterior in which we will finally be rid of the ugly blue color I have hated since we bought the house 10 years ago.

....eating bread. Well, making bread and eating some of it. My husband got me a bread maker for Christmas and it is one of my favorite gifts. I have been trying different flavors and types of bread so we are heavy up on the carbs over here. It also can make jam, yogurt, etc. so making jalapeno strawberry jam is next on my list (all that bread needs something to go with it). I also recently made this broccoli cashew stir fry for dinner a couple nights ago and it is SO good.
...making lists! January is such a good time to prep and get organized and I have been doing just that. I recently rearranged my half marathon training plan to be a little more intense. I’ve also started meal planning for a month at a time - nothing formal but stashing links or recipe ideas into a quick - you guessed it - Excel doc as I come across them. Putting a meal plan boarding our kitchen and actually sticking to it has made cooking dinner WAY less annoying to me.
...listening to so many books! I like to read an audiobook and a physical book at the same time because my brain is just like that so I’ve been speeding through the Creature Feature collection on Audible. Quick listens from some of my favorite spooky/horror authors like Paul Tremblay and Josh Malerman. I loved Ankle Snatcher by Grady Hendrix….I did not love The Pram by Joe Hill.
...reading a lot, as usual! I recently made the jump to The Storygraph and, while I’m not using the social media aspect of it, it has been motivating me to mark books as read so I can actually track how many I get through this year. I recently finished Small Game by Blair Braverman and really liked it. The concept was unique and it was such a fast, engaging read. The thing I’ll miss most about TikTok? The on point book reccs. R.I.P.
...watching Real Housewives of anything. I call myself an astute observer of the Housewives experience and, while I don’t watch Vanderpump Rules or most other Bravo shows, these cuckoo chic ladies entertain me. Housewives also makes for great background noise while I do other things because I’m addicted to multitasking. RHOSLC has been so good this season and why did that scene with Mary Cosby and her son make me cry so much? IYKYK.
...loving protein fiber matcha in the morning. I didn’t create the concept but I have put together my own spin on an even more functional matcha in the morning. I whisk together my favorite matcha powder, fiber with digestive enzymes, and vegetarian collagen builder with hot water. Then I mix in a 32g vegan protein shake and drink it with a big, metal boba straw. So good and filling and sometimes makes me feel like I could kick a door down in the best way.
...looking forward to friend time! Next week I’m going to Lip Lab to make custom lipstick as a belated holiday celebration with some of my favorite humans. Then I’m doing a quiet girls weekend away later this winter and I’m already looking forward to board games and quiet and reading and quiet and friend time and quiet and making little spa bags for everyone and…oh, quiet.
